Cucumbers into Quick Pickles

Do you have an overabundance of cucumbers? This post is for you!

I LOVE pickles. Pickled cukes, but really pickled anything. Each summer I plant 4-6 pickling cucumber plants to ensure I have an abundance of cucumbers that are perfect for making quick pickles.

What are quick pickles? Only the easiest thing ever! They require a few simple ingredients, most of which you probably already have, a jar and a fridge. No canning, boiling, or sealing required. Here's my current favorite recipe (note- I experiment using different vinegars for different flavors):
